It is no complex thing, but since it got rave reviews at teh most recent Kevin's house jam and beer tasting, here is the deal for my
Mild Cherry Porter
True Brew Extract Porter Kit
1/2 oz. (1/4 of the bottle) of fruit extract upon bottling. Sourced from Austin Homebrew Supply.
3 weeks in primary
3 weeks in secondary
1 week minimum, 3 weeks preferred in bottle before drankin'. Too soon and the fruit extract gives a chemical taste like an artificial sweetener. It mellows in time, becoming all good in 3 weeks.
Result - mild cherry flavor, moderate cherry coloration, great cherry aftertaste.
I have come to terms with being forever associated with being "fruity." At least it is for acceptable reasons.
